This weekend I prepared for Thanksgiving by making my co-workers bags of mini muffins to celebrate the holidays! I had some extra bananas, so I made enough for everyone to have two banana and one pumpkin. I think they turned out adorable! I bought the cellophane bags at Michaels last night as well as the twine string. Super easy! I also made the tags myself using the Sweet Pea font, which you can find for free online! Here's how to make the muffins:
Banana Muffins- makes 44 mini muffins
- 1 1/2 cups of flour
- 1 egg
- 1 tsp vanilla
- 1 tablespoon cinnamon
- 4 overripe bananas (mashed)
- 1/2 cup of vegetable or olive oil
- 1 cup granulated sugar
-1 tsp baking soda
- 2 tsp baking powder
1. Preheat oven to 350 degrees
2. Mix together the dry ingredients in one bowl, mix together wet ingredients in a separate bowl.
3. Combine both wet and dry ingredients and beat until well combined
4. Spray your mini muffin tins
5. Bake for 14 minutes or until edges are golden brown
6. Let cool for 10 minutes
Pumpkin Spice- makes 44 mini muffins
